Tree Hugger Apple Cupcakes


I was asked by Foodies@Work (on Twitter @foodiesatwork)to write a guest blog for their site.  They wanted me to come up with a cupcake that reflected the Pacific Northwest.  At first, I instantly thought seafood!! But reconsidered because I'm certain that a lobster cupcake wouldn't be that tasty.  So I decided on apples.

White Velvet Raspberry filled Cupcakes w/ Vanilla Buttercream topped with a fresh Raspberry


It was Tracy's grandmothers 84th birthday and she wanted cupcakes! She wasn't a big fan of chocolate so a white cake was ordered and wanted to add a bit of color with raspberries.  So what I came up with was this White Velvet Raspberry filled cupcakes topped with Vanilla Buttercream and a fresh raspberry! I made two dozen and I almost only delivered 23... hehe they were THAT yummy!

Oh.... when I saw you, I knew we'd go together like a "Wink" and a smile!! Oh yes, little Wink cupcakes you were made for me and I was made to smile for you!!

My little angel and I hopped in the Routan and jetted up to the big city of Seattle to the quaint neighborhood known as Queen Anne.  My mother lived in this neighborhood back when she met my father, so I knew this place was magical.  Wink Cupcakes, well you've continued on with that magic with your cupcake shop!

Guest Blogger Tracy from Sugar Crafter makes Homemade Vanilla Extract

I’m sure you’ve probably seen this everywhere by now, but since it was part of mine and hubby’s homemade Christmas gift baskets this year, I couldn’t post about it until now or I would have spoiled the surprise! When I first learned how easy it is to make your own vanilla extract though, I was so excited. It’s much cheaper than buying it in the store! And since I was about three months away from Christmas at the time, I knew they would make perfect gifts as well. I’ve been using the homemade vanilla extract in my baking ever since, and I don’t think I’ll ever go back to store-bought!
Here’s what you’ll need:
  • Vodka (any type will do – I used Skyy)
  • 1 vanilla bean per 1/3 cup vodka
  • Lidded glass bottles
